Cranberry & White Chocolate Muffins


Makes 12 muffins

125 g butter
2 dl sugar
5 dl flour
1 tsp baking powder
2,5 dl natural yogurt or sour cream
2 eggs
100 g white chocolate
1 lemon,grated rind
handful of dried cranberries

Mix together all dry ingredients.
In a separate bowl whisk the eggs,slightly cooled melted butter & yogurt or soured cream.
Now still stirring,add gradually  the flour mix.
Add chopped chocolate & cranberries.
Spoon the mixture into the prepared muffin tin.
Bake at 200C for 20 min.
Cool & dust with dusting sugar.

Peach & Almond Muffins


1 orange
2 peaches,cut into small pieces
handful of almond flakes
handful of goji berries
300 g flour
2 tsp baking powder
100 g sugar
2 eggs
110 ml sour cream or yogurt
110 ml milk
vanilla
50 ml melted butter

Grate the orange zest into the mixing bowl,add the juice of the half orange & goji berries.
Sift the flour & baking powder into the separate large mixing bowl.Add the sugar & almond flakes,mix together.
Preheat the oven to 200C.
Grease a 12 hole muffin tin with butter & line with paper muffin cases.
In a separate bowl whisk the eggs lightly.
Measure the sour cream or yogurt & milk into the jug,add vanilla & butter,mix well.Pour in the eggs.
Pour the egg mixture onto a flour.Quickly & gently mix everything together.Don't over mix.The mixture will be slightly lumpy.
Add the orange juice & goji berries,quickly mix through.
Spoon the mixture into the muffin holes & bake for 20-25 min until golden.
Cool in the tin slightly,then lift on a wire rack to cool.
Use the another half of the Orange for a Glaze:
50 ml dusting sugar
juice of half orange
Mix together.Add more dusting sugar if needed.

Salami & Cucumber Muffins


150 g salami cut into small cubes
250-300 g white flour (you can mix it with wholemeal)
1 tbsp baking powder
1 tsp salt
150 ml milk
100 ml sour cream or yogurt
1 small onion,grated
4 tbsp melted butter or olive oil
2 eggs
150 cucumber,grated
1 tbsp dill,chopped,fresh
handful of pumpkin seeds for sprinkle

Preheat the oven to 200C.
Combine all dry ingredients.
In a separate bowl mix together milk,eggs,dill.
Grate  the onion & cucumber.
Mix everything  together very gently,take care not to overwork it!
Butter the muffin pan,place muffin papers.
Spoon the dough in & sprinkle the seeds on top.
Bake 20-30 min,until muffins are golden brown on top.Test if inserted  toothpick comes out clean.
Let muffins cool in the pan for 5 mins,then on the wire rack.
As the school is just around the corner,its perfect for kids lunch boxes.

Fruit & Nut Muffins


1 orange
1 ripe banana
handful of pecans or hazelnuts,chopped
handful dried cranberries
300 g flour
2 tsp baking powder
90 g sugar
2 eggs
110 ml natural yogurt or sour cream
110 ml milk
few drops of vanilla extract
50 ml melted butter

Grate the zest from the orange into a mixing bowl.
Add the banana & mash up well with fork.
Add the juice of half of the orange,chopped nuts & cranberries,mix it together.
Sift the flour & baking powder into a separate large mixing bowl.Add the sugar & stir together.
Preheat the oven to 190 C.
Grease a 12-hole muffin tin with butter.
Crack the eggs into a bowl & whisk with fork.
Measure the yogurt or sour creamin a jug,then add milk & vanilla extract & butter.
Pour in the eggs.Whisk it through.
Pour the egg mixture onto the flour.Quickly & gently mix everything together-dont overmix or muffins wont be light.
The mixture will look slightly lumpy.
Add the mashed banana,dried fruit & nuts & mix it together,remember not to overmix,really only as much you really need to.
Spoon into the muffin holes & bake for 25 min until well risen & golden brown.
Cool in the tin slightly ,then put on a wire rack .
Dust with icing sugar just before serving.

Bacon & Cheddar Buns



2 tsp oil,plus extra for greasing
8 rashers of smoked streaky bacon,cut into small pieces
100 g mature cheddar cheese
350 g flour
2 tsp baking powder
2 tsp ground paprika
1 tsp salt
4 eggs
170 g butter,melted
400 ml milk
2 tbsp parsley,chopped

Heat oven to 180C & grease 12 wells of muffin tin.
Fry bacon in a frying pan with oil until crisp.Cool.
Cut two-thirds of cheese into little pieces,then finely grate the rest.
Sift the flour,baking powder,salt,ground paprika into bowl.
Whisk eggs & milk.
Pour the milk over flour mixture & stir few times until just combined(the mixture will be runny & lumpy but dont try to make it smooth).Add the bacon,cheese pieces & parsley,beeing careful not to overwork the mixture.
Spoon into the greased wells(they will be quite full),sprinkle each with a little grated cheese,then bake for 25 min or until golden,risen & firm to touch.

Pork Mince Muffins with Tomatoes & Cheese


1 dl dry breadcrumbs
2 dl sour cream
1 onion,chopped very finely
500 g mince
1 garlic glove,crushed
1 egg
1 tsp salt
0,5 tsp ground black pepper

Filling:
200 g cheese,grated
2 tomatoes,sliced

Mix all muffins ingredients together.

Butter 12-muffin pan.

Make 12 balls with floured hands,place them into the muffin pan & press them gently down against the sides.
Put on to the top of the each muffin a little bit of cheese,then tomato slice,season with salt & pepper.Sprinkle the rest of the cheese over again.

Bake at 200C for 30 min.,until muffins are golden brown.
