Amaretti Topped Pineapple
1 small pineapple
1 lemon
100 g sugar
vanilla ice cream
Peel & cut the pineapple into 2 cm chunks.
Heat the frying pan.
Pour the sugar onto the pan & pineapple pieces over,don't stir.
When sugar is melted,sprinkle over the lemon juice.
Stir everything through.
Sauté everything until the juices turn into caramel syrup & pineapple is slightly browned.
Lift the hot pineapple on to the ice cream & serve immediately with crushed amaretti biscuits on top.
You can also spice it up with some brandy or Cointreau..

Pineapple Upside Down Cake
1 small pineapple,cut rounds,core out
75 g sugar
25 g butter
170 g flour
2 eggs
150 ml milk
55 g sugar
1-2 passion fruits
handful of raspberries
Place the butter onto the hot pan,let it melt.
Scatter sugar over.
Place pineapple rounds on top.
Add raspberries.
Heat it all gently until slightly caramelized.
Stir in the passion fruit pulp.
Pour the mixture on pineapple & transfer into the oven.
Bake at 20-30 min in the preheated oven at 220C,until golden & springy on top.
Remove from the oven & turn onto plate.
Serve with whipped cream or vanilla ice cream.

Pineapple & Banana Meringue Puddings
227 g pineapple pieces in juice
3 tbsp cornflour2 large eggs,separated
275 ml pineapple or apple juice
1 tsp vanilla extract
50 g sugar
2 medium bananas
Preheat the oven to 190C.
Drain the juice from the can of pineapple into a medium-sized saucepan.
Blend the cornflour into this juice,then stir in the egg yolks & vanilla extract.
Heat,stirring all the time with the small whisk until the mixture boils & starts to thicken.
Remove the pan from the heat & stir in the half of the sugar.Tip in the pineapple,then slice in the bananas & stir together gently.
Spoon the mixture into 4 individual baking dishes or large heatproof teacups.Place on a tray & bake for 5 min whilst you make the meringue topping.
Whisk the egg whites until they hold their shape.Tip in the remaining sugar & whisk again until the meringue is glossy.
Pile onto the hot desserts & bake for 5 min until billowy & golden.
